When you are not eating, it buffers (or neutralises) the acidity that some foods produce; which protects the teeth.
It has antibodies called IgA that helps in the immune system. This antibody is unique saliva.
Sugarless chewing gum increases the saliva flow often five-fold. So when you are not eating, the chewing gum stimulates the salivary glands to pump saliva to protect the teeth, the mouth and allow proper swallowing function.
Reduced saliva flow, due to diet, smoking, medications and medical treatments or conditions produce dry mouth̉. Often people use sugar lozenges to stimulate saliva. This only ruins teeth but can lead to diabetes.
Sugarless gum is the safest answer.
